I have 4. They're two 21" LCDs and two 22" LCD widescreens. I just have a fairly big desk and line them up in a semi-circularish type of way facing where I sit.
Poker is silly.

I have used 4 monitors for publishing before, but I have no idea how it was set up - my employer did that. Being able to edit and see 4 full pages at a time was pretty tite. My setup looked like the bottom photo in spank's post. I don't think I could play poker on such a setup, but I don't come from a gaming background like a lot of the young guys here, so maybe it would work.
