Everyone remember's piers Shrimp Fettuchini, I thought that was a really good thread. Easy delicious recipes are like little treasures. Here's a little something I made today for lunch that was pretty simple and delicious.



Tilapia and stuff

Some fresh tilapia filets (any mild whitefish will do)
Salt + Pepper
A few cloves of garlic
Crushed red pepper
Slices olives (black, green, calamata, whatever you've got and whatever tickles your fancy. A mixture would probably be great)
Plum tomatos
Olive Oil

(for ease of understanding, henceforth we will assuming 2 smallish filets, feeding one)



Heat some olive oil in a trusty pan. Season both sides of tilapia generously with coarse salt and freshly ground pepper. Saute Tilapia on medium-high heat. It will cook fairly fast if your filets aren't very thick (they won't be.). About 1-2 minutes per side should suffice. Place filets on serving plate.


In the same pan, assuming you didn't leave behind a ton of tilapia (if you did, simply get out a second pan, WOW) , add a little more oil. Add a few cloves of thinly sliced garlic (most people mince garlic in recipes, but I like it better this way) and few small pinches of crushed red pepper. Let this heat for about a minute to infuse the oil with some aromatic flavor. Add your diced tomato and handful of sliced olives and heat and toss for 3 minutes or until tomatos are very soft.


Pour olive + tomato mixture over fish and enjoy.
